Whole30-Day 15

Well I’m officially in week 2 of my Whole30!  Currently I’m struggling with EXTREME hunger after dinner.  And that’s even when I eat 3 good size meals a day.  My friends who have done a Whole30 say this can be common at the half way point..I guess its like a detox.  They suggest adding a fourth meal.  I’m going to give that a try but frankly its hard enough with a baby to even have time to make and eat 3 meals a day LOL!  I really hope it starts to subside soon!

I’m sorry this post is so BORING!  I really don’t have much to say 😦  Dinner was even an absolute FLOP!  I tried to make the Bora Bora Fireballs by The Clothes Make The Girl but I think because I used frozen pineapple and tried to halve the recipe it became to liquidy and so in turn I basically had meat pancakes.  The flavor was yummy but an odd texture.  Either way I still ate them.  I wasnt going to waste it and I didn’t have anything else to eat in its place 🙂

Sunday 10/5/14

I woke early from a very sleepless night.  The Paleo Baby has started to work on breaking skin on his second molar.  This means ALL night nursing, even in bed with me!  I got up had a BIG cup of coffee and made some breakfast 🙂  I whipped up some eggs, finished off my homemade bacon and started to bake up some Paleo Baby (and for adults) breakfast muffins and cookies!  Click HERE for recipes 🙂

Around 12 I put the baby down and FINALLY sat down for a little creative time.  I started to work on a pair of crib shoes for him that I had cut out over a month ago.  After about 30 minutes the baby woke…..so much for that!  The rest of the day was spent chasing the baby all over the house.  He was in a VERY active mood and unfortunately it was not very warm to take him outside.  At around 5pm the in-laws Skyped with my husband and the baby and I finally got a second chance to finish at least one of the booties from pair!  I was so excited of my work, I proudly brought it out and showed everyone only to find that he had already outgrown the pattern!

photo(3)Well I guess that’s what I get for taking a month to find time to work on it!  Oh well, luckily I have plenty of this minky giraffe fabric to make him a size 12-18 month 🙂  Eventually my goal is to sell these on Etsy along with some other fun creations!  I also plan on having a blog to go along with my shop.  These things are probably years away, especially since right now I cant even seem to get a post up within 24 hrs of it happening LOL!!!  If any of you are the creative type and want your little ones to sport these ADORABLE and easy to make crib shoes, HERE is the pattern I used!

For dinner we had chicken sausages and sweet potato soup (recipe in week 1 menu).  I was ever so lucky to enjoy my dinner on the couch with a sleeping baby on my chest.  It was rather interesting trying to eat soup this way, but like many moms you  find a way to make it work 🙂

Saturday 10/4/14

Today was a super busy day!  We started our morning off with looking at a potential house to purchase at 9am, then headed off to Clarksville, TN to do some shopping.  We hit up Babies R Us, Walmart, Sam’s Club and Once Upon a Child!  For lunch we went to Tilted Kilt and enjoyed a big bun less burger.  It was pretty tasty!  Mine had corn beef and caramelized onions while the hubby’s had bacon and a fried egg.  The Paleo Baby actually really enjoyed the corn beef!

We got home around 4pm and just chilled for the rest of the day…Dinner was left over Tuna Stuffed Potatoes.  Wish I had more to share but that’s about it 🙂

Whole 30-Day 12 (With Recipe)

We got good news today that our renters received the Unemployment Claim that they thought they were not going to receive.  This also means (for the moment) that they do not want to break the lease and want to stay 🙂  It was sweet relief to me!

For dinner I made some Crispy Baked Hot Wings and a side salad.  Now I’m going to share a little secret with you…..I have the key to making CRISPY wings in the oven!!

Crispy Baked Chicken Wings

Ingredients

  • 3lbs of wings
  • 2 tbsp of baking powder
  • 1 tsp of salt

Instructions

  1. Set oven to 250
  2. Mix the baking powder and salt together
  3. Toss in the wings and coat them evenly
  4. Once they are all coated put them in the oven (move rack to the bottom of the oven) and bake for 30ish minutes.
  5. Up the temperature to 425 (raise the wings to the center of the oven) for another 45ish minutes.
  6. When they are all crispy and done take out the wings, toss in your sauce (I used Franks Original Hot Sauce)
  7. broil to really crisp them up!

Trust me!! You will thank me 🙂

After all  of us (I saved a few un-sauced for Paleo Baby)  polished off ALL 3 pounds of wings, we gave the baby a bath and put him down.  The hubby and I then watched some Hulu Plus and hit the sack early (about 9:30pm).

Today was a day of much stress!  After a long and trying day of trying to keep the Paleo Baby entertained and trying to work at the same time I get a text message from our renters saying they wanted to break their lease!  We are 1000 miles away in KY and the renters are in CT so its not like we can just run over and talk to them or easily show the home to new potential renters.  So all day while trying to focus on work all I could do was post FOR RENT ads all over Craigslist and Zillow!  After getting 5 responses in less then 5 hrs for our house I started to calm down a bit.  Once off work I made some mayo, which in my opinion is a bit meditative.  You have to slowly and carefully add the Olive Oil and keep focus for about 10 minutes.  If you go to fast BAM you break the emulsion!  For dinner I FINALLY made the Tuna Stuffed Potatoes (recipe in Week 2 menu post) by the Domesticated Man!  The recipe was so much better then I thought it would be.  When I picked the recipe at the beginning of the week I had mixed feelings….would it be to fishy?  would it be dry?  NO!  It was moist, flavorful and definitely something I will make again!

After putting the baby to bed I finally sat down on the couch and I am going to confess to having a glass of wine 😦 I just couldn’t take it any more!  I felt tired, broken and had a hard time feeling like things would ever really go our way.  AND DAMN did that wine taste good!  NO I am not going to start my “time” over again because I have come to the realization that I probably will (not like I’m going to plan it) have slip ups during this Whole30.  It’s how I keep going to the end that matters!  I wanted a reset for myself.  I wanted to get off the lazy fast food train that I had started to ride.  I wanted to start cooking healthy dinners again.  I wanted to NOT drink every night as a way to relax.  So far that is EXACTLY WHAT I HAVE BEEN DOING!  In the end looking back I ate well all day, drank my 60oz of water, took all my vitamins, so in “MY” Whole30 that’s a win!  I really didn’t want to tell anyone that I had that glass of wine but HEY this is REAL LIFE with REAL STRESS and I figured honesty is always the best route to take.  Maybe someone is reading this who had a glass of wine a week or so into their Whole30 and are thinking  “this is to hard”, and instead of quitting all together they will just keep going and pick up fresh the next morning.  Because Tomorrow is a New Day 🙂

Wednesday 10/1/14

The day yet again got away from me!  The husband didn’t get home till after 5pm (and we all were STARVING), so I wasn’t able to get my dinner together as planned (the paleo baby will NOT let me cook alone) so it was leftover carnitas AGAIN!  Luckily its all gone now so I have to make dinner tomorrow 😉  I drank about 50oz of water, ate breakfast, took all my vitamins but unfortunately was unable to get a workout in…the baby once again slept in the living room so no access to my DVD player and enough space to do Pilates 😦  I know, I know excuses, excuses but I really am doing the best that I can…its so hard to have the energy to work full time, care for the baby full time, pick up the house multiple times a day and make dinner…then squeeze a workout!  UGG!!!
