Whole30-Day 8

I must admit I’m feeling a bit discouraged so far.  I know its only been a week but I really thought I would feel SOME sort of difference in the 3 pair of jeans I’m trying to squeeze my beeeeehind into.  But nothing!  I’m hoping by the end of week 2 I will see a LITTLE something….

My goals for this week are to drink 60oz of water..which I DID today! Watch my snacking of the pork rinds (HEY a nursing momma’s gotta snack, don’t judge!) and to keep it to a bare minimum.  I also want to work on eating 3 meals a day!  I find myself missing breakfast and for me I know that’s not good for my waistline!  I am also going to try and incorporate some sort of physical activity….I have this 20 minute Windsor Pilates video I can easily fit into during Paleo Baby’s nap time….

For dinner tonight I made Dutch Oven Carnitas (recipe on Week 2 Menu page)!  They were mouth watering good!  I had made this recipe in the past so I knew it would be a sure win!  I had only wished I had some mayo left over so I could have made the chipotle mayo sauce for it…but I have plenty of leftovers and I need to make mayo anyways for tomorrows dinner so it will be on my afternoon to do list!

Well off to bed I go….to dream of margaritas and paleo pancakes 😉  (the baby is already asleep and I’m actually tired)  Only 22 more days!

Whole30-Day 7 (With Recipe)

Today was a pretty nondescript day.  I worked on my meal plan for the week while Pale Baby napped for 3 HOURS and made some brunch (fresh breakfast sausage, tomato slices with 2 fried eggs over it).  When the baby woke we headed out to WalMart to pick up a few things I needed to make my meals for the week.  Once back home (about 3:30pm) I made an egg casserole for the week, baked some yellow potatoes for dinner and made a dreamy, creamy, Italian dressing by The Clothes Make the Girl (recipe below)!

Once I FINALLY got everything done, I paired the potatoes and salad with some roast chicken and sat down to dinner at 7:30pm.  Paleo Baby was VERY demanding tonight so it took a while to get everything done.

Day 7 DONE, 23 more days to go!

Cream Italian Dressing

Ingredients:
2 tablespoons homemade mayo (this is the mayo I ALWAYS MAKE)
1 tablespoon vinegar: balsamic, wine, or cider (I used balsamic!!)
1 clove garlic, crushed
1/8 teaspoon Italian herb blend (or pick one: dried oregano, rosemary, or basil)
salt & pepper, to taste

Directions:

  1. Crush the dried herbs with your fingers, then add to mayo, along with garlic. Blend well with a fork.
  2. Mix in the vinegar, then taste and season with salt and pepper. If your dressing is too thick, add either vinegar or water – a 1/4 teaspoon at a time – until it’s the right consistency. Keep in mind that it will get slightly more liquidy as you toss it with your salad ingredients.

Saturday 9/27/14

6 days into my Whole30 and I’m feeling better!  My sleep is improving (well as much as it can with a 13 month old), my cravings are starting to subside and my brain fog is slowly lifting!  I also seem to Go Go Go all day and NOT crash at night.  This is a good and bad thing!  Good because I don’t feel completely exhausted when I sit down but bad because I am staying up till 10 or 11pm at night!  Hopefully that to shall pass.

Today the hubby and I had leftover Grain-Free Chicken Fried Steak (recipe on Day 5) for lunch and enjoyed the latest episode of Biggest Loser while the Paleo Baby napped for 2.5 hrs.  When the baby woke we gave him a bath and decided to head over to Clay, KY, visit with the cousins and partake in Clay Days.  I knew this would be a Whole30 issue since it was essentially a fair and pretty much nothing but fried food.  Oh well we figured we would figure it out.  Once their the smells over took me and I began to get REALLY hungry, so we walked through the food area and of course….NOTHING met the Whole30 standards.  NOW they did have potato ribbons!  These are delicious white potatoes (allowed on Whole30) quick fried in oil (all oils are allowed on the Whole30) and served HOT!  Nothing else!  No flour, no gluten, NOTHING!  They are delicious and even though they are NOT “technically” allowed in the Whole30 since they are “deep fried” I still enjoyed some (I shared a small basket (no more then one potato, they were VERY THIN) with the hubby and Paleo Baby)!

I know I know….*FAIL*, but lets get real!  In the Whole30 its “OK” to pan fry, or bake (usually oil covered) but not deep fry for 2-5 minutes??? I don’t get it!  Maybe if you are used to a SAD diet (Standard American Diet), this could trigger you to over eat or make you run to your nearest McDonald’s and over indulge in a Super Sized container of gluten covered fries.  But that’s not the case for me.  So for today, as my husband told me “Looks like you are picking and choosing which Whole30 rules you are following.”  I guess that was some what fair to say but I don’t feel it derailed my (or his) goals of this Whole30.

After my “indulgence” I was still STARVING (it had been 5 hours since we had eaten anything).  In desperation NOT to completely jump off the cliff (I walked the very edge with my potato ribbons) we walked over to the one of only two restaurants in Clay (YES Clay is a super small town!) called Jeri’s.  I ordered the Chicken Cranberry Walnut Salad with Warm Bacon Dressing!  It was sooooo good!

Unfortunately about 20 minutes later, my stomach started to slightly cramp and not feel so good!  I’m pretty sure I was gluten-ized!  I’m almost 100% sure it was the dressing.  The dressing was on the thicker side (normally warm bacon dressing is made up of oil, bacon fat and apple cider vinegar…sooo I thought I would be safe), so it probably had some flour or something like that as a thickener.  Why do I think it was the food and not my imagination you ask?  Well because around the same time as I was quietly thinking all this to myself my husband turns to me and says his stomach didn’t feel so hot (he had the same dressing and pretty much same salad).

Lesson of the day:  Always ask whats in your dressing!

Whole30-Day 5 (With Recipes)

Today was a great day!  Paleo Baby woke up without a fever and we had both got a good nights rest.  The day flew by, baby went down for a nap and I got to make my lunch; baby free!  I made the Sardine Cakes of course!  My new obsession!  They are soooo filling!  At about 3:30pm  I made The World’s Best Paleo Gravy (recipe below) by Brittany Angell, then went and picked up my GMO, Soy FREE, Free Range eggs and a few other goodies at the farmers market in town.  Once back home (STARVING) I started dinner!  DRUM ROLL…….Grain-Free Chicken Fried Steak (recipe below) by Mommypotamus!  I paired my dinner with fresh green beans while the hubby enjoyed cinnamon baked carrots and parsnips.  Dinner was FABULOUS!  We were stuffed!  Another day DOWN, 25 more to go!

Grain-Free Chicken Fried Steak

Ingredients

  • 1 pound cube steak or round steak
  • 3-5 eggs, whisked
  • 2 cups almond flour or almond meal
  • 1/4 cup coconut flour
  • 3 teaspoons unrefined sea salt
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • tallow or coconut oil for frying

Instructions

  1. Tenderize your steaks
  2. Place whisked eggs in a medium bowl. In a separate medium bowl mix together almond flour, coconut flour, salt, onion powder, garlic powder, paprika and pepper.
  3. Place each steak in the bowl of whisked eggs and coat thoroughly.
  4. Dredge steaks in the flour mixture.
  5. Set aside to rest for 3-5 minutes. While you’re waiting go ahead and preheat a non-stick pan with enough oil to generously coat the bottom (use medium heat).
  6. Place steaks in pan (if it doesn’t sizzle it’s not hot enough!) and fry on both sides until golden brown.

 

Worlds Best Paleo Gravy

Ingredients

  • 2 Tablespoons of Butter (dairy or nondairy.)
  • 1 onion finely chopped.
  • 1/4 Tsp. Black Pepper
  • 1 1/2 Tablespoons of Starch (Potato Starch, Arrowroot or Tapioca)
  • 5-6 Tablespoons of Blanched Almond Flour.
  • 1 1/4 Cup of Chicken Broth
  • 1/2 Tsp. Garlic Powder
  • 1 Tbs Heavy Cream OR Heavy Coconut Milk (optional)
  • salt to taste.

Instructions

  1. To a sauce pan add the butter, and onions. Cook over medium low heat for 20 minutes or so until caramelized (a beautiful golden brown color and cooked through) .
  2. Add the Black Pepper, Starch and Almond Flour. Stir for 1 minute and then add the remaining ingredients.
  3. Stir and gently boil until thick. If you want your gravy thicker feel free to add an additional 2-3 TBS of almond flour.
  4. Salt to taste. At this point I like to put the gravy in the food processor to get it 100% smooth (by grinding up the onions) but this step is 100% optional.
  5. Gravy will thicken as it cools.

Whole30-Day 4 (With Recipe)

My morning started out PERFECT!  I woke up at 6 am to find that the Paleo Baby had slept THROUGH THE NIGHT in his crib!  This means I got 8 solid hours of sleep!  I was refreshed, motivated and ready to take on the world.  After quietly enjoying my coffee in bed, planned an amazing dinner and logging in for work, the baby began to stirr at about 8:30.  I went in to get him only to find that he had a FEVER!  UGGGG!!!!  This always happens when he is cutting multiple teeth!  I knew what was coming….a very needy baby who will not let me put him down.  Basically scratch my amazing dinner plans…..

I did however manage to make a KILLER lunch!  Paleo Baby fell asleep in the sling and I was able to hold him and cook lunch!  I made Grain Free Sardine Cakes by Ditch the Wheat.  They were sooooo good!  I know I know…ewwwwwwww sardines!  But let me tell you….these little cakes tasted nothing like what you would image sardines to taste like!  I’m so happy I found a way to enjoy sardines because I have had 4 cans sitting in my pantry for a very long time and I just couldn’t bring myself to eat them straight.  I wanted to eat them because they are packed full of protein, DHA, Omegas and calcium!  They are a SUPER FOOD that should really be consumed on a regular basis by women and especially those that are pregnant or nursing!  I loved this recipe so much I will be making it AGAIN tomorrow for lunch!

Grain Free Sardine Fish Cakes

Ingredients

  • 1 can of sardines (mine were packed in water and weighed 84 grams when drained)
  • 1 egg
  • 1 ½ tbsp of coconut flour
  • 1 tbsp of mustard
  • 2 tsp of dried parsley (more if you really like it)
  • ¼ cup of chopped green onion
  • 1/8 tsp of salt
  • 1/4 cup almond flour for coating the cakes

Instructions

  1. Place all the ingredients in a food processor except for the almond flour. Pulse until all combined. Roll into small or medium sized balls and flatten with the palm of your hands. Dip the fish cakes in a small bowl of almond flour. Evenly coat both sides.
  2. Cook the fish cakes in a pan with ghee/butter/etc on low-medium heat turning once.
  3. The cakes are done when both sides are golden and crispy.

 

All and All Day 4 was successful, I stayed the course and have another day under my belt!  Only 26 more days!

Whole30-Day 3

Wednesday 9/24/14

The baby is FINALLY down and I’m about to pass out as I type this post!  Paleo Baby decided he was not into taking a nap today but more that he wanted mommy to hold him all day and constantly nurse!  He is currently getting in his molars so lots of nursing since solids seem to hurt his mouth at times.  All of his nursing is making me RAVENOUS for food!  I cant seem to get full!  I know some of it is because I have “off limits” foods (like paleo muffins and pancakes) and some of it is because I’m naturally burning more calories.  I hope in the next few days my brain will calm down and then the extra calories burned while nursing wont affect me so much.  Also I think I didn’t eat enough food today.  With the baby so clingy it was really hard to get myself anything to eat…this is something I need to work on in general….

I must admit though!  A glass of wine sure sounded perfect when Paleo Baby went to bed…but instead I texted my sister Julie, confessed my desires while she talked me off the ledge.  Only 27 more days!
